Our newest release comes by way of Finca Villa Pastora, located in the Colombian municipality of Palestina, in Huila Department. The farm was acquired back in the 1980s by Mrs. Pastora Anacona, grandmother to Yulieth and Gerson. She planted the first coffee trees, beginning a family tradition that now spans three generations of the Mora Ortega family. Named in her honor, Villa Pastora represents decades of dedication to producing exceptional, high-quality coffees.

Today, Yulieth’s father, Álvaro Mora, continues to build on his mother’s legacy with a deep commitment to quality and sustainable farming practices. For Álvaro, every cup of Villa Pastora coffee reflects the care, skill, and passion invested by his family.

Beyond its own production, Villa Pastora serves as a hub for the local community—employing nearby residents and supporting other producers through fermentation guidance and drying services. Álvaro’s involvement in projects like Delagua has helped expand the farm’s reach, connecting their coffee to a broader audience and contributing to the local economy.

After harvest, this incredible pink bourbon lot undergoes a 96-hour underwater fermentation, followed up by 48 hours in a mechanical dryer, and finally rests for 14 days in a drying shed - resulting in a cup that balances clarity, sweetness, and a distinct sense of place in the ripe red fruits tasting wheel.

Yulieth and her family act as a bridge between their community and international buyers. In addition to processing their own coffee, they purchase cherry from neighboring farms to craft carefully processed naturals, cupping each lot to ensure consistent quality and continued learning.
