This Wilder Lasso Colombian Chiroso is one we’ve been waiting a long time to get our hands on, and it absolutely delivers. Like all our coffees, it’s a light roast and fruit forward. This one is specifically an anaerobic washed Chiroso from San Adolfo, Huila, and it lands like a super dialed in modern Colombian: insanely aromatic, crystal clear, and beyond floral. Even dry, it’s all lavender and sweet honey, and that carries straight into the cup.

In the cup, it’s tight and intentional: lavender up front, a silky white honey sweetness through the middle, and a long, clean lychee finish. The texture is the standout. It’s not a loud, ferment-heavy anaerobic, but more about clarity and structure, with fruit and florals layered neatly rather than competing. If you like expressive but refined washed Colombians (think Geisha adjacent, but doing its own thing), this sits squarely in that lane, and honestly, it’s one that kind of stops you in your tracks.

The backstory makes it even better. Wilder Lasso, originally a veterinarian, pivoted into coffee to reset his family’s farm and now leans into precision agriculture, dialing soil pH, and nutrients to push cup quality. For this lot, ripe Chiroso cherries are selectively harvested, pulped, and fermented anaerobically for 40 hours underwater to highlight intrinsic notes like passion fruit and lavender without tipping into funk. Grown at 1900 masl on Bella Alejandría, it’s a super clean, highly dialable coffee that shines on pour-over, especially if you like chasing florals and that sweet, tea-like structure on a Stagg X or V60. To us, it’s one of our favorite coffees we’ve ever brought in, so definitely grab this one soon, as it won’t last.
