This is the second of two releases we have from the Quebraditas Farm and this one is stunning. The producer, Edinson Argote, is an ambitious innovator whose career is dedicated to pushing the boundaries of coffee craftsmanship.

His journey began with a focus on sensory analysis, leading him to train and gain experience on Colombia's most innovative farms. He specialized in advanced processing control before establishing Quebraditas Coffee Farm. Here, Edinson and his family cultivate exotic varieties like Gesha, Bourbon Sidra, and Ombligon - blending tradition with cutting-edge techniques to produce exceptional coffees.

Sidra: Advanced Washed Process

This is one of those coffees that stops you mid cupping. The first question you utter is...what in the world is that.

Produced by Edinson Argote, this Sidra goes through a tightly controlled washed process that includes thermal shock and a re-stabilized fermentation. The result is anything but traditional. It is intensely aromatic, super clean, and loaded with bright, expressive fruit.

Right away you get a burst of floral lychee, followed by layered sweetness of red currant and a soft, structured finish of rose pedals and sparkling grape that keeps pulling you back in. Everything is dialed. Nothing feels muddy or overdone. Just sharp, vibrant clarity from start to finish.

For us, it was an instant yes on the table, the kind of coffee that reminds you how far processing can be pushed while still staying precise.
