To start - We have to give a MASSIVE thank you to our friends Dani and Julio at La Nacional for providing us with a sample of José's stunning coffee! This meticulously produced natural from José Argüello at Finca Santa Cruz completely blew us away on the cupping table. At first sip we noticed big blueberry pie notes that faded into a silky dark chocolate, before rounding out into a juicy concord grape finish. This coffee is yet another example of the incredible coffees coming out of Chiapas and Mexico in general. We cannot wait for you to try this one! Process: Natural | 12hr Drupe Oxidation, 48hr Tunnel Fermentation with Sacharomyces Cereviceae, 25 Brix 2 day sun, 25 day drying at 50% in African Raised Beds.

Bio: The Argüello Enríquez family are the owners of Finca Santa Cruz, located near the Biósfera del Triunfo reserve, at 1400 to 1700 MASL. It was 4 years ago when José Argüello, the youngest family member, decided to produce Specialty Coffee to demonstrate Mexico's capability of providing great coffee to the world, as well as the ability to compete with the world's best coffees out there. 

With 60 hectares, his farming practices reflect his desire for a more precise, agronomically advanced, and conservation-focused approach: he harvests cherry according to Brix, ferments according to pH, and generally seeks experimentation, growth, and collaboration. The area is biodiverse, filled with native Inga trees that also provide shade, allowing the coffee to grow in harmony with the surrounding reserve.

In 2018 they created a protocol which was replicated in 2019, as well as 2021, and went on to compete at Mexico's Excellence Cup contest and WIN!. They won 1st place in 2019 with a score of 93.04 for their natural Gesha. This marks the highest score in the history of Mexico COE.
