Felix is a first generation coffee producer who began sowing coffee plants back in 2009. The first years brought many challenges, but the farm began to see success thanks in part to the resources he could access as part of El Sendero Cooperative. This farm, Yula, is named for the area where it is located; in Popti Mayan, Yula means “the memories.”

Thoughts from the producer: "The farm is only accessible by horseback, not with vehicles, which made our work more complicated. I remember that when we started, we brought in coffee seedlings on our backs. We did this work with happiness and dedication. Thanks to the El Sendero Coop and the microcredits they offered us, we were able to make changes in the farm and our children have been trained in coffee too."

About the processing: The cherries are harvested at their peak maturity and are brought to depulp about 4 hours after picking. After depulping, the coffee is placed in containers to ferment with a minimal quantity of water. The fermentation lasts for 32 hours, a long slow fermentation that contributes to this coffee’s lovely profile. Once fermentation is complete, the coffee is thoroughly washed and then placed into a container for a reposo or a second soaking in clean water. The reposo lasts for 6 hours. After the soaking is complete, the coffee is ready to dry. The parchment coffee rests on a patio in the sun for 7 hours a day for 6 days, and Felix turns the coffee frequently in order to ensure thorough and even drying. Once the drying is complete, Felix delivers the coffee to our warehouse in San Antonio Huista.”

We could not wait to get this coffee in and up on our site! As soon as we came across the cup on the Primavera table, we were immediately drawn to it by the fresh sparkling strawberry notes - almost like the essence of strawberry in sparkling water. Crystal clear profile with hints of vanilla creme and light milk chocolate we bought this bag without even a second thought. Hope you enjoy it as much as we have!
